This is basically a stock which has been added a gellifier in order to make it a sliceable condiment used on Danish cold cut sandwiches, in particular pork roulade and liver pate.

We are using a mixed pork and beef broth which we turn into a hard sliceable gelly by using "Kappa" from the worlds greatest chef, Ferran Adrias Texturas series which is one of the Modernist Cuisines new breed of food texture tools - it is made from natural seaweed and makes a more solid gelly, perfect condiment on your Danish open sandwich......
