For all Danes this is one of the most missed foods when living outside Denmark, the herring is a fat little fish living in the north Sea and the Baltic Sea, caught in August - October when it has the highest body fat.

It is then processed into fillets often on the very ship where it was caught to ensure freshness and pickled in Vinegar with a variation of herbs included and kept in cold storage, this is true Viking food dating back 1.000 years and trust us, this is a fantastic food experience.

This version is a bit special, it has actually been panfried before it was pickled in the brine, this makes a very unique taste and defenitely something for the seafood connoisseur.

Enjoy with Dark Danish Rye Bread, Curry Pickles and an Icecold Aquavit on the side, this calls for the stronger flavored versions of the Aquavits.
