Originally this dish was made by slow cooking a boars head.......today we make a more modern version with more appealing ingredients, we use pork knuckles and pork belly, we still slow cook them for 4 hours with lots of nice herbs and vegs. The meat is then handpicked off the bones and mixed back in the soup which has such a high content of natural gellifier it will become a solid sliceable cold cut when chilled.

Enjoy this dish on rye bread with a strong mustard (Dijon or English) and pickled beet roots, welcome to a heavy duty Viking Dish.
